- For the Caesar Dressing:
- ½ cup full-fat mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp lemon juice
- ¼ cup Parmesan cheese (freshly grated)
- 1–2 garlic cloves (minced)
- ¼ tsp black pepper
- Pinch sea salt
- For the Chicken:
- 5 chicken cutlets
- Sea salt
- Ground black pepper
- Oil (for frying)
- For Breading:
- ⅓ cup all-purpose flour
- ½ tsp salt
- ¾ tsp smoked paprika
- 2 eggs (whisked)
- ¼ tsp salt
- ¾ cup panko crumbs
- ¼ cup breadcrumbs
- 1 tsp dried parsley
- ½ tsp ground black pepper
- ½ tsp sea salt
- ½ tsp dried oregano
- 1 tsp garlic powder
- ¼ cup Parmesan cheese (freshly grated)
- For the Sandwich Assembly:
- 2 romaine hearts (chopped)
- 1–2 French baguettes
- Parmesan cheese (freshly grated)
Instructions
- In a medium-sized bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, garlic, black pepper, and salt until smooth and creamy.
- Toss 4-5 tablespoons of the dressing with the chopped romaine and set aside.
- Prepare chicken by laying out the cutlets and pounding them to an even thickness; season with salt and pepper.
- Set up a breading station with flour, egg mixture, and breadcrumb mixture.
- Heat oil in a frying pan over medium heat.
- Dredge each chicken cutlet in flour, dip in egg, and coat in breadcrumbs; fry until golden brown on both sides.
- Let the fried chicken cool on a wire rack.
- Slice baguettes and spread reserved dressing inside.
- Add a fried chicken cutlet and a generous amount of Caesar salad on top.
- Sprinkle with more grated Parmesan before closing the sandwich and serving immediately.
Notes
For extra flavor, customize toppings such as tomatoes or different cheese. Leftovers can be stored in the refrigerator for up to 3 days.
