Easy Crockpot Beef Bourguignon

Description

A set-it-and-forget-it dish featuring tender beef chuck, smoky bacon, and rich flavors, perfect for family dinners.


Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 bottle (750 ml) red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 bouquet garni (thyme, bay leaf, and parsley)
  • Salt and pepper to taste
  • 8 ounces mushrooms, quartered
  • 2 tablespoons flour (optional for thickening)

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add the beef chuck and sear until browned, about 5-6 minutes. Transfer to the Crockpot.
  3. Add the crispy bacon, onion, carrots, garlic, red wine, beef broth, tomato paste, and bouquet garni into the Crockpot. Season with salt and pepper. Stir to combine.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  5. During the last hour of cooking, add the mushrooms.
  6. If desired for a thicker sauce, mix flour with a little water to create a slurry and stir in during the last 30 minutes of cooking.
  7. Serve hot over mashed potatoes or with crusty bread.

Notes

This dish can be customized with your choice of vegetables. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
