Description
A set-it-and-forget-it dish featuring tender beef chuck, smoky bacon, and rich flavors, perfect for family dinners.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 4 slices bacon, chopped
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 bottle (750 ml) red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 bouquet garni (thyme, bay leaf, and parsley)
- Salt and pepper to taste
- 8 ounces mushrooms, quartered
- 2 tablespoons flour (optional for thickening)
Instructions
- In a skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the beef chuck and sear until browned, about 5-6 minutes. Transfer to the Crockpot.
- Add the crispy bacon, onion, carrots, garlic, red wine, beef broth, tomato paste, and bouquet garni into the Crockpot. Season with salt and pepper. Stir to combine.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- During the last hour of cooking, add the mushrooms.
- If desired for a thicker sauce, mix flour with a little water to create a slurry and stir in during the last 30 minutes of cooking.
- Serve hot over mashed potatoes or with crusty bread.
Notes
This dish can be customized with your choice of vegetables. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
