Ingredients

- 4 Sausages (Italian or spicy)
- 2 Bell Peppers (any colors)
- 1 Onion (preferably yellow)
- 2 Cloves Garlic (fresh or pre-minced)
- 1 Can Diced Tomatoes (14.5 oz)
- 1 Tablespoon Olive Oil
- Salt and Pepper to taste
- Hoagie Rolls or Bread (for serving)
Instructions
- Chop the bell peppers and onion into strips and add to the slow cooker with minced garlic.
- Layer the sausage links on top of the vegetables.
- Pour the diced tomatoes over everything and sprinkle with salt and pepper.
- Drizzle with olive oil and gently swirl to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve over hoagie rolls or with bread, adding your favorite toppings.
