A quick and easy one-pot Cuban Chicken Fricassee that’s perfect for weeknight dinners, loaded with flavor and comfort.

- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1/2 cup white wine (optional)
- 1 teaspoon oregano
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chicken thighs skin-side down and brown for about 5-6 minutes on each side. Remove chicken and set aside.
- Toss in the onion, bell pepper, and garlic. Sauté for about 4-5 minutes until the onion is translucent.
- Stir in the diced tomatoes, chicken broth, white wine, oregano, cumin, salt, and pepper. Scrape the flavorful bits off the bottom of the pot.
- Return the browned chicken to the pot, skin side up, and bring to a simmer. Cover and cook for 30-35 minutes until chicken is tender and cooked through.
- Serve the chicken with sauce over rice or crusty bread. Garnish with fresh cilantro.
