Description

A quick and easy one-pot Cuban Chicken Fricassee that’s perfect for weeknight dinners, loaded with flavor and comfort.


Ingredients

Scale
  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup white wine (optional)
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chicken thighs skin-side down and brown for about 5-6 minutes on each side. Remove chicken and set aside.
  2. Toss in the onion, bell pepper, and garlic. Sauté for about 4-5 minutes until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, white wine, oregano, cumin, salt, and pepper. Scrape the flavorful bits off the bottom of the pot.
  4. Return the browned chicken to the pot, skin side up, and bring to a simmer. Cover and cook for 30-35 minutes until chicken is tender and cooked through.
  5. Serve the chicken with sauce over rice or crusty bread. Garnish with fresh cilantro.
