- 2 limes, juiced
- 2 oranges, juiced
- 1 whole bulb garlic, crushed
- ¾ cup olive oil
- ¼ cup cilantro, fresh, chopped
- 1 tablespoon ground cumin
- ½ tablespoon kosher salt
- ½ teaspoon ground black pepper
- 1½ lbs pork tenderloin
Instructions
- In a large bowl, whisk together the lime juice, orange juice, crushed garlic, olive oil, cilantro, cumin, salt, and pepper to create the marinade.
- Place the pork tenderloin in the marinade, turning to coat. Let it sit while you prep your pan.
- Heat a large skillet over medium-high heat for about 5 minutes.
- Remove the pork from the marinade and let the excess drip off. Add some marinade to the hot pan, then add the tenderloin and sear for 4 minutes per side until browned.
- Pour the remaining marinade into the pan, scraping the bottom, and bring to a simmer. Reduce heat to medium-low, cover, and cook for 12-15 minutes, until the pork reaches 145°F, flipping halfway through.
- Once cooked, remove the pork from heat and let it rest for 5 minutes before slicing.
- Serve sliced pork with remaining juices over the top.
Notes
Feel free to adapt the recipe with different citrus fruits or vegetables you have on hand. Marinating for a few hours or overnight enhances the flavor.
