Description

Ingredients

  • 1/2 cup water
  • 2 egg whites
  • 1 cup pecans (or nuts of choice)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, mix together the sugar and water over medium heat, stirring occasionally until dissolved (about 5 minutes).
  2. Bring the mixture to a boil until it reaches 250°F, the hard ball stage (about 10-15 minutes).
  3. While boiling, beat the egg whites in a separate bowl until stiff peaks form (about 5-7 minutes).
  4. Slowly pour the hot sugar syrup into the egg whites while mixing on low speed until fully combined.
  5. Gently fold in pecans, salt, and vanilla extract.
  6. Drop spoonfuls of the mixture onto parchment paper and let cool completely (about 30 minutes).
