Ingredients

- 2 egg whites
- 1 cup pecans (or nuts of choice)

- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, mix together the sugar and water over medium heat, stirring occasionally until dissolved (about 5 minutes).
- Bring the mixture to a boil until it reaches 250°F, the hard ball stage (about 10-15 minutes).
- While boiling, beat the egg whites in a separate bowl until stiff peaks form (about 5-7 minutes).
- Slowly pour the hot sugar syrup into the egg whites while mixing on low speed until fully combined.
- Gently fold in pecans, salt, and vanilla extract.
- Drop spoonfuls of the mixture onto parchment paper and let cool completely (about 30 minutes).
