- 1 medium-sized dragon fruit, diced into bite-sized cubes
- 1 cup cooked black beans, rinsed and drained
- 1/2 red onion, finely chopped
- 1 large bell pepper, diced (red or yellow preferred)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- Combine the diced dragon fruit, black beans, red onion, bell pepper, and cilantro in a large bowl.
- Make the dressing by whisking together lime juice, olive oil, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the fridge for a few minutes before enjoying.
