Description

A vibrant, no-cook Dragon Fruit Savoury Bean Salad that comes together in about 15 minutes, perfect for a refreshing weeknight dinner.


Ingredients

  • 1 medium-sized dragon fruit, diced into bite-sized cubes
  • 1 cup cooked black beans, rinsed and drained
  • 1/2 red onion, finely chopped
  • 1 large bell pepper, diced (red or yellow preferred)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Combine the diced dragon fruit, black beans, red onion, bell pepper, and cilantro in a large bowl.
  2. Make the dressing by whisking together lime juice, olive oil, salt, and pepper in a small bowl.
