A quick and easy one-pot Egg Fried Rice recipe perfect for busy weeknight dinners.
Ingredients

- 2 cups cooked rice
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 cup peas and carrots
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet or wok over medium heat until shimmering.
- Add peas and carrots; stir-fry for 2-3 minutes until softened.
- Push veggies to one side of pan and pour beaten eggs on the other side; scramble until fully cooked, about 2 minutes.
- Add cooked rice and mix everything together, scraping bits from the bottom.
- Pour in soy sauce and season with salt and pepper; mix well.
- Stir-fry for another 2-3 minutes until heated through.
- Garnish with chopped green onions and serve hot.
Notes
Feel free to customize with leftover proteins or other vegetables you have on hand.
