Description

A quick and easy one-pot Egg Fried Rice recipe perfect for busy weeknight dinners.


Ingredients

Scale
  • 2 cups cooked rice
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 cup peas and carrots
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat until shimmering.
  2. Add peas and carrots; stir-fry for 2-3 minutes until softened.
  3. Push veggies to one side of pan and pour beaten eggs on the other side; scramble until fully cooked, about 2 minutes.
  4. Add cooked rice and mix everything together, scraping bits from the bottom.
  5. Pour in soy sauce and season with salt and pepper; mix well.
  6. Stir-fry for another 2-3 minutes until heated through.
  7. Garnish with chopped green onions and serve hot.

Notes

Feel free to customize with leftover proteins or other vegetables you have on hand.
