- 4 medium-sized eggs
- 4 tbsp mayonnaise
- 1 tbsp chopped coriander
- A pinch of salt
- ΒΌ tsp black pepper
- 4 pieces of sliced bread
Instructions
- Boil the eggs by placing them in a saucepan, covering with water, bringing to a boil, and cooking for 8-10 minutes.
- Peeling and chopping: Cool the eggs, peel them, slice in half, and place yolks in a bowl. Chop whites into small pieces.
- Mixing the yolks with 4 tablespoons of mayonnaise, 1 tablespoon of chopped coriander, salt, and pepper until well combined.
- Fold in the chopped egg whites gently to keep some chunks intact.
- Assemble the sandwiches by spreading the mixture on bread, topping with another slice, and cutting in half.
