- 4–6 large eggs
- 2 tablespoons unsalted butter
- 2–3 English muffins, split in half
- 4–6 ounces smoked salmon
- 4 ounces cream cheese
- Chopped fresh herbs (chives or dill)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Split the English muffins in half and arrange them on a baking sheet.
- Spread a thin layer of cream cheese on each muffin half.
- Place slices of smoked salmon over the cream cheese.
- In a bowl, whisk the eggs with salt and pepper.
- Melt butter in a skillet over medium heat, then pour in the whisked eggs.
- Stir gently until eggs are just set but still creamy, about 3-5 minutes.
- Spoon scrambled eggs over the salmon on each muffin half.
- Bake in the preheated oven for 5-7 minutes.
- Garnish with fresh herbs before serving.
Notes
Feel free to substitute smoked salmon with bacon or sautéed veggies for a different flavor.
