Description

A delightful and comforting dish, Eggs Napoleon combines eggs, smoked salmon, and cream cheese atop English muffins for a quick weeknight dinner.


Ingredients

  • 46 large eggs
  • 2 tablespoons unsalted butter
  • 23 English muffins, split in half
  • 46 ounces smoked salmon
  • 4 ounces cream cheese
  • Chopped fresh herbs (chives or dill)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Split the English muffins in half and arrange them on a baking sheet.
  3. Spread a thin layer of cream cheese on each muffin half.
  4. Place slices of smoked salmon over the cream cheese.
  5. In a bowl, whisk the eggs with salt and pepper.
  6. Melt butter in a skillet over medium heat, then pour in the whisked eggs.
  7. Stir gently until eggs are just set but still creamy, about 3-5 minutes.
  8. Spoon scrambled eggs over the salmon on each muffin half.
  9. Bake in the preheated oven for 5-7 minutes.
  10. Garnish with fresh herbs before serving.

Notes
