Description
Ground turkey rice bowls that come together in about 30 minutes, perfect for a weeknight meal.
Ingredients

- 1 tbsp olive oil
- 1 lb ground turkey (or chicken/beef)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning (or 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika)
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
- Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro, lime wedges
Instructions
- Cook the rice according to package directions.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and sauté for 3-5 minutes until soft and translucent.
- Toss in minced garlic and cook for another minute until fragrant.
- Add ground turkey, breaking it up, and cook until browned, about 5-7 minutes.
- Add taco seasoning (or substitute) and water/chicken broth, bring to a simmer, reduce heat, and cook for another 2-3 minutes.
- Stir in black beans and corn, cooking for another 3-5 minutes.
- To serve, place cooked rice in a bowl and top with turkey mixture and desired toppings.
Notes
This recipe is highly customizable—feel free to add different vegetables or beans based on what you have at home.
