Description

Ground turkey rice bowls that come together in about 30 minutes, perfect for a weeknight meal.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb ground turkey (or chicken/beef)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning (or 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika)
  • 1/2 cup water or chicken broth
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)
  • Optional toppings: salsa, avocado slices, sour cream or Greek yogurt, shredded cheese, fresh cilantro, lime wedges

Instructions

  1. Cook the rice according to package directions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and sauté for 3-5 minutes until soft and translucent.
  4. Toss in minced garlic and cook for another minute until fragrant.
  5. Add ground turkey, breaking it up, and cook until browned, about 5-7 minutes.
  6. Add taco seasoning (or substitute) and water/chicken broth, bring to a simmer, reduce heat, and cook for another 2-3 minutes.
  7. Stir in black beans and corn, cooking for another 3-5 minutes.
  8. To serve, place cooked rice in a bowl and top with turkey mixture and desired toppings.

Notes

This recipe is highly customizable—feel free to add different vegetables or beans based on what you have at home.
