Description

A fresh, crunchy salad made with thinly shaved Brussels sprouts, bright lemon juice, and topped with parmesan cheese and toasted nuts.


Ingredients

  • 3 cups fresh Brussels sprouts, thinly shaved
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 fresh lemon
  • Salt, to taste
  • Pepper, to taste
  • ½ cup freshly shaved parmesan cheese
  • ½ cup toasted nuts (walnuts, pecans, or a mix)
  • ½ cup dried cranberries

Instructions

  1. Shave the Brussels sprouts and place them in a large mixing bowl.
  2. Add olive oil, lemon juice, salt, and pepper; toss to coat.
  3. Taste and adjust seasoning as needed.
  4. Add parmesan cheese, toasted nuts, and dried cranberries; gently toss to combine.
