Ingredients

  • 2 cups macaroni pasta
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup breadcrumbs
  • 2 eggs
  • Oil for frying

Instructions

  1. In a large pot of salted boiling water, cook the macaroni according to the package instructions—usually around 8 minutes. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Add in the flour, stirring frequently for about a minute until it’s bubbly and a bit golden. Gradually whisk in the milk and stir until it thickens up, about 3-5 minutes.
  3. Take it off the heat and mix in the cheese, salt, and pepper. Stir until melted.
  4. Toss the cooked macaroni into the cheese sauce until every noodle is coated.
  5. Let the mixture cool for about 10-15 minutes.
  6. Form the mixture into small, bite-sized balls (about 1 inch in diameter).
  7. Dip each ball first into the beaten eggs, then roll in the breadcrumbs until fully coated.
  8. Heat about an inch of oil in a deep pan over medium heat. Fry the bites in batches, about 4-5 at a time, until golden brown and crispy (3-4 minutes per batch).
  9. Transfer the bites to a paper towel-lined plate to drain excess oil.
  10. Serve warm with your favorite dipping sauce.
