- 2 cups macaroni pasta
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup breadcrumbs
- 2 eggs
- Oil for frying
Instructions
- In a large pot of salted boiling water, cook the macaroni according to the package instructions—usually around 8 minutes. Drain and set aside.
- In a medium saucepan, melt the butter over medium heat. Add in the flour, stirring frequently for about a minute until it’s bubbly and a bit golden. Gradually whisk in the milk and stir until it thickens up, about 3-5 minutes.
- Take it off the heat and mix in the cheese, salt, and pepper. Stir until melted.
- Toss the cooked macaroni into the cheese sauce until every noodle is coated.
- Let the mixture cool for about 10-15 minutes.
- Form the mixture into small, bite-sized balls (about 1 inch in diameter).
- Dip each ball first into the beaten eggs, then roll in the breadcrumbs until fully coated.
- Heat about an inch of oil in a deep pan over medium heat. Fry the bites in batches, about 4-5 at a time, until golden brown and crispy (3-4 minutes per batch).
- Transfer the bites to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.
