Description
A refreshing no-bake summer treat made with juicy peaches and creamy Greek yogurt that your family will love.
Ingredients
Scale
- 2 ripe peaches
- 1 cup Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh mint leaves for garnish (optional)
- 1 cup granola or crushed nuts (optional topping)
- 6 popsicle molds and sticks
Instructions
- Wash the peaches, then slice them into rings about 1/2 inch thick, removing the pit.
- In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy.
- Place a peach ring at the bottom of each popsicle mold. Pour the yogurt mixture over the peach rings, covering them completely. Add another peach ring on top.
- Carefully insert the popsicle sticks into the center of each mold, pushing them down gently.
- Pop the molds into the freezer for about 240 to 360 minutes, or until solid.
- Run warm water over the outside of the molds to loosen them up, then gently pull out the pops.
- If desired, sprinkle with granola or crushed nuts and add a mint garnish before serving.
Notes
These pops can be made a day or a week in advance and stored in the freezer. Customize with your favorite fruits.
