A comforting and flavorful garlic butter rice recipe that comes together in one pot, perfect for busy weeknights.
Ingredients

- 1.5 cups dry long grain white rice or jasmine rice, rinsed and drained
- 2.5 cups low-sodium chicken broth or vegetable broth
- ¼ cup finely chopped yellow onion
- 1.5 tablespoons minced garlic
- Salt to taste
- Freshly ground black pepper to taste
- 4 tablespoons unsalted butter, cut into 1 tablespoon pieces
- 1 tablespoon minced fresh parsley (optional, for garnish)
Instructions
- Melt 2 tablespoons of butter in a large saucepan over medium heat.
- Sauté the finely chopped yellow onion until translucent, about 3-4 minutes.
- Add the minced garlic and stir for about 30 seconds until fragrant.
- Pour in the chicken broth (or vegetable broth), season with salt and pepper, and bring to a rolling boil.
- Add the rinsed rice, stir, cover tightly, and lower the heat to the lowest setting. Simmer for 15-18 minutes.
- Let the rice rest for about 5-10 minutes without lifting the lid.
- Fold in the remaining 2 tablespoons of butter until completely melted.
- Serve the rice, optionally garnished with fresh parsley.
