Description

A comforting and flavorful garlic butter rice recipe that comes together in one pot, perfect for busy weeknights.


Ingredients

  • 1.5 cups dry long grain white rice or jasmine rice, rinsed and drained
  • 2.5 cups low-sodium chicken broth or vegetable broth
  • ¼ cup finely chopped yellow onion
  • 1.5 tablespoons minced garlic
  • Salt to taste
  • Freshly ground black pepper to taste
  • 4 tablespoons unsalted butter, cut into 1 tablespoon pieces
  • 1 tablespoon minced fresh parsley (optional, for garnish)

Instructions

  1. Melt 2 tablespoons of butter in a large saucepan over medium heat.
  2. Sauté the finely chopped yellow onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and stir for about 30 seconds until fragrant.
  4. Pour in the chicken broth (or vegetable broth), season with salt and pepper, and bring to a rolling boil.
  5. Add the rinsed rice, stir, cover tightly, and lower the heat to the lowest setting. Simmer for 15-18 minutes.
  6. Let the rice rest for about 5-10 minutes without lifting the lid.
  7. Fold in the remaining 2 tablespoons of butter until completely melted.
  8. Serve the rice, optionally garnished with fresh parsley.
