Description

A quick and easy comfort food dish made with flavorful chicken, tender potatoes, garlic, and Parmesan cheese, all cooked in a crockpot.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the Potatoes: Wash and halve the baby potatoes.
  2. Season the Chicken: Rub chicken with olive oil and sprinkle with Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Layer Ingredients in the Crockpot: Place the halved potatoes in the bottom of the crockpot and top with the seasoned chicken.
  4. Add the Chicken Broth: Pour chicken broth over the chicken and potatoes.
  5. Add Garlic and Parmesan: Sprinkle minced garlic and grated Parmesan cheese over the chicken.
  6. Cook the Mixture: Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
  7. Check the Chicken: Ensure chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  8. Serve and Enjoy: Remove chicken and potatoes onto a platter and spoon sauce over the top.
  9. Garnish: Sprinkle chopped parsley before serving.
