Ingredients

Scale
  • 2 cups water or fruit juice
  • 2 tablespoons unflavored gelatin powder
  • 2 tablespoons honey or 1/2 teaspoon stevia (optional, to taste)
  • 1/4 cup fresh fruit purée
  • 1 tablespoon lemon juice

Instructions

  1. Bloom the Gelatin: Pour cold water (or juice) into a bowl and sprinkle the gelatin powder evenly over the surface. Let it sit for about 5 minutes without stirring.
  2. Combine the Liquid: In a saucepan, heat the remaining water or juice along with honey or stevia until warm (do not boil).
  3. Incorporate the Gelatin: Whisk in the bloomed gelatin and stir until completely dissolved. Mix in the fruit purée and lemon juice.
  4. Set it to Chill: Pour the mixture into silicone molds or a shallow dish and chill in the fridge for 3-4 hours until set.
  5. Serve and Store: Unmold your gelatin and store leftovers in an airtight container in the fridge for up to 7 days.
