Description
A delicious and quick one-pot meal that your family will love, made with juicy chicken thighs glazed with soy sauce and honey served over fluffy rice.
Ingredients

- 400g boneless, skinless chicken thighs
- 200g short-grain Japanese rice
- 300ml water
- 15ml sesame oil
- 1g sea salt
- 60ml low-sodium soy sauce
- 60ml mirin
- 30ml sake
- 21g organic honey
- 1g freshly grated ginger
Instructions
- Rinse the rice under cool water until the water runs clear.
- Combine the rinsed rice with 300ml of water in a pot and bring to a boil.
- Cover and reduce heat to low, cooking for about 12 minutes.
- Let the rice rest with the lid on for another 10 minutes.
- Pat the chicken thighs dry and cut them into bite-sized chunks.
- Sprinkle with a couple pinches of salt.
- Heat 15ml of sesame oil in a skillet over medium-high heat.
- Add the chicken and cook for 3-4 minutes on each side until golden brown.
- Toss in the grated ginger and stir for about 30 seconds.
- Pour in 30ml of sake and deglaze the pan.
- Mix in the soy sauce, mirin, and honey, stirring to coat the chicken.
- Let the sauce simmer for 4-5 minutes until it thickens.
- Serve the glazed chicken over the fluffy rice. Enjoy!
Notes
For extra flavor, consider adding sesame seeds or sliced green onions on top. Pairs well with edamame or a fresh cucumber salad.
