Description

An indulgent, no-bake chocolate mousse that comes together in about 30 minutes, perfect for a cozy night dessert.


Ingredients

Scale
  • 200g good quality dark chocolate (about 70%), roughly chopped
  • 50g unsalted butter, cubed
  • 4 large eggs, separated
  • 2 tbsp caster sugar (or granulated sugar)
  • 300ml double cream (heavy cream)
  • 1 tsp vanilla extract
  • Pinch of fine sea salt
  • Cocoa powder for dusting

Instructions

  1. Separate the yolks and whites of the 4 eggs into two bowls and let them come to room temperature for 10-15 minutes.
  2. Gently melt the dark chocolate and unsalted butter together over a pan of simmering water or in a microwave until smooth.
  3. Whisk the egg yolks with the caster sugar in another bowl until pale and slightly thickened for about 2-3 minutes.
  4. Temper the yolks by stirring in a spoonful of melted chocolate, then fold in the remaining chocolate mixture until smooth.
  5. Whip the double cream with the vanilla extract to soft peaks.
  6. Whip the egg whites with a pinch of sea salt until they hold soft to medium peaks.
  7. Fold the whipped cream into the chocolate-yolk mixture, then carefully fold in the egg whites to maintain airiness.
  8. Spoon the mixture into serving glasses and refrigerate for at least 2 hours to set.
  9. Before serving, dust with cocoa powder.

Notes

Serve with fresh berries or a dollop of whipped cream. Can be stored in the fridge for 3-4 days or frozen for up to 3 months.
