- 1 tablespoon sea salt for boiling water
- Water (enough to cover the potatoes)
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 6 tablespoons unsalted butter (cold and cut into small cubes)
- Salt (to taste)
- Finely ground white pepper (to taste)
- 2 tablespoons chives or green onions (finely chopped, for topping)
Instructions
- Peel and cut potatoes into even-sized chunks (1 to 2 inches).
- Place potatoes in a large pot, cover with cold water, and add sea salt. Bring to a boil, then simmer gently for 15-20 minutes until fork-tender.
- Drain potatoes and return them to the pot over low heat for 2-3 minutes to evaporate excess moisture.
- Use a potato masher to mash until creamy with no lumps.
- Add cold butter cubes to the hot potatoes and stir until fully melted.
- Pour in heavy cream and whole milk, mixing until combined. Adjust seasoning with salt and finely ground white pepper.
- Sprinkle chopped chives or green onions before serving.
