Description

Ingredients

  • 2 lbs Yukon Gold or Maris Piper potatoes
  • 1 tablespoon sea salt for boiling water
  • Water (enough to cover the potatoes)
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 6 tablespoons unsalted butter (cold and cut into small cubes)
  • Salt (to taste)
  • Finely ground white pepper (to taste)
  • 2 tablespoons chives or green onions (finely chopped, for topping)

Instructions

  1. Peel and cut potatoes into even-sized chunks (1 to 2 inches).
  2. Place potatoes in a large pot, cover with cold water, and add sea salt. Bring to a boil, then simmer gently for 15-20 minutes until fork-tender.
  3. Drain potatoes and return them to the pot over low heat for 2-3 minutes to evaporate excess moisture.
  4. Use a potato masher to mash until creamy with no lumps.
  5. Add cold butter cubes to the hot potatoes and stir until fully melted.
  6. Pour in heavy cream and whole milk, mixing until combined. Adjust seasoning with salt and finely ground white pepper.
  7. Sprinkle chopped chives or green onions before serving.

Notes

These mashed potatoes can be made ahead of time and kept warm in a slow cooker. They are versatile and can be served with a variety of dishes.
