Description

A quick and easy recipe for potato cakes that your family will love, perfect for busy weeknight dinners.


Ingredients

  • 480g mashed potatoes
  • 120g all-purpose flour
  • 1 onion, diced
  • 1 egg
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 120ml vegetable oil

Instructions

  1. In a large bowl, combine the mashed potatoes, flour, diced onion, egg, salt, and pepper. Stir gently until all the ingredients are just combined.
  2. In a non-stick frying pan, heat the vegetable oil over medium heat.
  3. Scoop about a quarter cup of the potato mixture into the hot oil and gently flatten to form a 4-inch cake. Fry for about 4-5 minutes on each side until golden brown and crispy.
  4. Drain the fried potato cakes on paper towels to remove excess oil and repeat until all the mixture is used up.
  5. Serve hot and enjoy!

Notes

These potato cakes are customizable; feel free to add leftover veggies or spices you have on hand. They serve well with sour cream or applesauce.
