Irresistible molten lava cake that is quick and easy to make, perfect for impressing family and friends.
Ingredients

- 6 oz (170g) high-quality dark chocolate (60-70% cocoa)
- 1/2 cup (115g) unsalted butter
- 3 large eggs
- 3 large egg yolks
- 1/2 cup (100g) granulated sugar
- 1/4 cup (30g) all-purpose flour
- 1 tsp vanilla extract (optional)
- 1 tbsp espresso powder (optional)
- Pinch of salt
- Butter and cocoa powder (for greasing ramekins)
Instructions
- Preheat your oven to 425°F (220°C).
- Generously butter the ramekins and dust the insides with cocoa powder.
- Melt chocolate and butter together until smooth.
- In another bowl, whisk eggs, egg yolks, sugar, vanilla, espresso powder, and salt until pale and fluffy.
- Fold the melted chocolate mixture into the egg mixture, sift in flour, and gently combine.
- Divide the batter evenly among the ramekins.
- Bake for 12-14 minutes until edges are set but centers are jiggly.
- Let cool for 1-2 minutes, then serve warm with ice cream if desired.
Notes
Serve warm for the best gooey center. Can be stored in the refrigerator for 2-3 days and reheated in the microwave.
