Description

Irresistible molten lava cake that is quick and easy to make, perfect for impressing family and friends.


Ingredients

Scale
  • 6 oz (170g) high-quality dark chocolate (60-70% cocoa)
  • 1/2 cup (115g) unsalted butter
  • 3 large eggs
  • 3 large egg yolks
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1 tsp vanilla extract (optional)
  • 1 tbsp espresso powder (optional)
  • Pinch of salt
  • Butter and cocoa powder (for greasing ramekins)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Generously butter the ramekins and dust the insides with cocoa powder.
  3. Melt chocolate and butter together until smooth.
  4. In another bowl, whisk eggs, egg yolks, sugar, vanilla, espresso powder, and salt until pale and fluffy.
  5. Fold the melted chocolate mixture into the egg mixture, sift in flour, and gently combine.
  6. Divide the batter evenly among the ramekins.
  7. Bake for 12-14 minutes until edges are set but centers are jiggly.
  8. Let cool for 1-2 minutes, then serve warm with ice cream if desired.

Notes

Serve warm for the best gooey center. Can be stored in the refrigerator for 2-3 days and reheated in the microwave.
