- 1 sheet puff pastry, thawed
- 200g finely chopped mushrooms (cremini, shiitake, or button)
- 1 leek, finely sliced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 beaten egg (or plant-based milk for vegan option)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Add mushrooms and leeks, sauté until soft (about 5-7 minutes). Season with salt and pepper.
- Roll out puff pastry on a floured surface and cut it into 3-inch squares.
- Place a small amount of the mushroom and leek mixture in the center of each square.
- Fold the corners of the pastry over the filling and pinch to seal. Brush the tops with beaten egg.
- Bake in the preheated oven for 15-20 minutes until golden brown and flaky.
- Serve warm and enjoy!
