Description

A quick and easy Greek Chicken Bowl recipe that comes together in about 30 minutes, perfect for a flavorful family dinner!


Ingredients

Scale
  • 2 cups cooked rice or quinoa
  • 1 pound grilled chicken
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • ½ cup feta cheese, crumbled
  • Fresh parsley or cilantro, for garnish
  • Salt and pepper to taste
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1 cucumber (grated and drained)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rice or quinoa according to package instructions (15-20 minutes). Fluff with a fork when done.
  2. While the grains are cooking, grill the chicken until no longer pink, about 6-7 minutes per side, then slice into strips.
  3. Layer the bowls starting with rice or quinoa, then add grilled chicken, followed by cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese.
  4. To make the tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, and salt and pepper in a bowl until smooth.
  5. Drizzle tzatziki sauce over the bowls and garnish with parsley or cilantro.
  6. Enjoy immediately or store for meal prep.

Notes

This recipe is highly customizable; you can substitute chicken with shrimp or use leftover veggies.
