A quick and easy Greek Chicken Bowl recipe that comes together in about 30 minutes, perfect for a flavorful family dinner!
Ingredients

- 2 cups cooked rice or quinoa
- 1 pound grilled chicken
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, diced
- ½ cup feta cheese, crumbled
- Fresh parsley or cilantro, for garnish
- Salt and pepper to taste
- For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon vinegar
- Salt and pepper to taste
Instructions
- Cook the rice or quinoa according to package instructions (15-20 minutes). Fluff with a fork when done.
- While the grains are cooking, grill the chicken until no longer pink, about 6-7 minutes per side, then slice into strips.
- Layer the bowls starting with rice or quinoa, then add grilled chicken, followed by cherry tomatoes, cucumber, red onion, bell pepper, and feta cheese.
- To make the tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, and salt and pepper in a bowl until smooth.
- Drizzle tzatziki sauce over the bowls and garnish with parsley or cilantro.
- Enjoy immediately or store for meal prep.
