Ingredients

- 4 cups chicken broth
- 2 cups fresh vegetables (carrots, celery, spinach, etc.)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs (like parsley or dill) for garnish
Instructions
- Heat a little oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.
- Add the fresh vegetables of choice, stirring occasionally, and let them cook for another 5 minutes.
- Pour in the chicken broth and bring to a rolling boil. Add the dried oregano, thyme, and salt and pepper.
- Simmer and reduce the heat, letting everything meld together for about 20 minutes until the veggies are tender.
- Taste and adjust seasoning, then serve hot, garnished with fresh herbs and a dash of lemon juice if desired.
