Description

A vibrant Greek Healing Soup that comes together in 30 minutes, perfect for a quick and easy weeknight dinner.


Ingredients

Scale
  • 4 cups chicken broth
  • 2 cups fresh vegetables (carrots, celery, spinach, etc.)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Heat a little oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until soft and translucent, about 5 minutes.
  2. Add the fresh vegetables of choice, stirring occasionally, and let them cook for another 5 minutes.
  3. Pour in the chicken broth and bring to a rolling boil. Add the dried oregano, thyme, and salt and pepper.
  4. Simmer and reduce the heat, letting everything meld together for about 20 minutes until the veggies are tender.
  5. Taste and adjust seasoning, then serve hot, garnished with fresh herbs and a dash of lemon juice if desired.
