Description

This zesty Greek Lemon Rice comes together in about 25 minutes and is made all in one pot for a quick and easy weeknight dinner that your family will love!


Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups vegetable or chicken broth
  • 1 lemon (juice and zest)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1/4 cup fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Stir in the rice, coating it well in the oil, and let it cook for about 2 minutes.
  3. Pour in the broth, then add the lemon juice and zest.
  4. Bring to a boil, then reduce heat, cover, and let it simmer for 15–20 minutes until the rice is tender and the liquid is absorbed.
  5. Remove from heat and fluff the rice gently with a fork.
  6. Add the fresh parsley and season with salt and pepper to taste, stirring to combine.
  7. Serve warm, either as a side or a main dish.
