Ingredients

- 1 cup long-grain rice
- 2 cups vegetable or chicken broth
- 1 lemon (juice and zest)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the rice, coating it well in the oil, and let it cook for about 2 minutes.
- Pour in the broth, then add the lemon juice and zest.
- Bring to a boil, then reduce heat, cover, and let it simmer for 15–20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and fluff the rice gently with a fork.
- Add the fresh parsley and season with salt and pepper to taste, stirring to combine.
- Serve warm, either as a side or a main dish.
