Ingredients

- 1 pound udon noodles
- 1 pound shrimp
- 1 cup mixed vegetables (bell peppers, carrots, broccoli)
- ΒΌ cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- 2–3 cloves garlic, minced
- Green onions, sliced (for garnish)
Instructions
- Cook udon noodles according to package instructions (5-7 minutes), then drain and rinse under cold water.
- Heat sesame oil in a large pan or wok over medium heat.
- Add minced garlic and stir-fry for about 30 seconds until fragrant.
- Add shrimp and mixed vegetables, stir-fry for 3-5 minutes until shrimp is pink and vegetables are tender.
- Toss in the cooked udon noodles and mix well.
- Pour soy sauce and mirin over the noodle mixture and stir until well coated and heated through.
- Garnish with sliced green onions before serving.
Notes
This recipe is versatile; feel free to swap shrimp for chicken or tofu and use any leftover vegetables you have.
