A quick and easy one-pot casserole that combines lean protein and mixed vegetables, topped with melted cheese, perfect for a weeknight family dinner.

- 1 lb ground beef (or turkey/chicken)
- 2 cups mixed vegetables (zucchini, bell peppers, broccoli)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic. Sauté for 3-4 minutes until translucent.
- Add ground beef to the skillet and cook until browned, about 5-7 minutes.
- Stir in mixed veggies and seasonings. Cook for another 5 minutes until tender-crisp.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
Feel free to customize the casserole with whatever veggies or proteins you have on hand. It can also be prepared ahead of time and stored before baking.
