Ingredients

  • 6 large eggs
  • 2 tablespoons milk or heavy cream
  • 1 tablespoon butter or olive oil
  • 1/4 cup shredded cheese (cheddar, Swiss, or your favorite)
  • Salt and pepper to taste
  • 1/4 cup cooked bacon bits, ham, or leftover rotisserie chicken (optional)

Instructions

  1. Crack and whisk all eggs with milk in a bowl. Season with salt and pepper.
  2. Heat butter in a non-stick pan over medium-low heat.
  3. Pour in eggs and let them sit for 30 seconds before gently stirring with a spatula.
  4. Continue stirring gently every 30 seconds, pushing eggs from edges toward center.
  5. Add cheese and protein when eggs are almost set but still slightly wet.
  6. Remove from heat and let residual heat finish cooking (they’ll continue cooking in the hot pan).
