A delicious one-pot meal that’s perfect for busy weeknights, this Hobo Casserole features layers of potatoes, ground beef, cream of mushroom soup, and cheese.

- 1 pound ground beef
- 4 medium potatoes, sliced
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef and chopped onion together for 5-7 minutes, breaking up the meat.
- Drain any excess fat from the skillet.
- In a large baking dish, layer the sliced potatoes on the bottom, followed by the cooked ground beef mixture.
- Spoon over the cream of mushroom soup and top with shredded cheddar cheese.
- Season each layer with salt and pepper.
- Cover the dish with foil and bake for about 60 minutes, until the potatoes are tender.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
