Description

A delicious one-pot meal that’s perfect for busy weeknights, this Hobo Casserole features layers of potatoes, ground beef, cream of mushroom soup, and cheese.


Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef and chopped onion together for 5-7 minutes, breaking up the meat.
  3. Drain any excess fat from the skillet.
  4. In a large baking dish, layer the sliced potatoes on the bottom, followed by the cooked ground beef mixture.
  5. Spoon over the cream of mushroom soup and top with shredded cheddar cheese.
  6. Season each layer with salt and pepper.
  7. Cover the dish with foil and bake for about 60 minutes, until the potatoes are tender.
  8. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.
