- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 tablespoon active dry yeast
- 3/4 cup unsalted butter (cold)
- 1/2 cup warm milk
- 1/4 cup warm water
- 1 egg (for egg wash)
Instructions
- Activate the yeast: In a bowl, combine warm milk, warm water, and the yeast. Let it sit for about 5 minutes until frothy.
- Mix dry ingredients: In a large mixing bowl, whisk together flour, sugar, and salt.
- Combine dough: Add the yeast mixture to the dry ingredients. Mix until a dough forms.
- Knead the dough: Knead the dough for about 5 minutes until smooth.
- Chill the dough: Wrap the dough in plastic and refrigerate for at least 30 minutes.
- Prepare the butter: Roll out the cold butter between sheets of parchment paper into a rectangle and refrigerate for another 15 minutes.
- Roll the dough: Roll out the chilled dough into a large rectangle about 1/4 inch thick. Lay the chilled butter in the center and fold the dough over the butter, sealing the edges.
- Lamination: Roll out the dough and fold it into thirds. Repeat a few times, chilling in the fridge for at least 1 hour after each folding.
- Shape the croissants: Roll into a rectangle, cut into triangles, and roll into croissant shapes.
- Allow to rise: Place the shaped croissants on a baking sheet, cover, and let rise until doubled in size, about 1-2 hours.
- Preheat the oven: Preheat oven to 400°F (200°C).
- Egg wash: Brush each croissant with egg wash.
- Bake: Bake for 15-20 minutes until golden brown.
- Cool and enjoy: Let them cool slightly before serving.
Notes
These croissants can be filled with various ingredients like chocolate or ham and cheese. They freeze well and can be reheated in the oven.
