- 2 ounces cream cheese, full-fat, brick style (57 grams)
- 3–4 cups powdered sugar (330–440 grams)
- 1 teaspoon vanilla extract for filling
- 1/4 teaspoon salt for filling
- 1 tablespoon cream (if needed)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
- Add in the molasses and vanilla extract and mix well.
- Beat in the eggs, one at a time, until well combined.
- Whisk together the flour, cinnamon, baking soda, and salt in another bowl.
- Gradually stir this flour mixture into the wet ingredients until combined.
- Fold in the oats until just combined.
- Scoop tablespoon-sized mounds of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for about 10-12 minutes, until edges are golden brown.
- Cool cookies on the baking sheet for about 5 minutes before transferring to a wire rack.
- Combine softened butter, cream cheese, powdered sugar, vanilla extract, and salt in a mixing bowl.
- Beat until smooth and creamy (2-3 minutes).
- Add cream if the frosting is too thick.
- Flip half of the cookies over, spread filling on one cookie, and top with another cookie.
Notes
These cookies can be made ahead and frozen for later enjoyment. Serve with milk or tea.
