Instructions
- Prepare the Pork: Start by trimming any excess fat and silver skin from the pork tenderloin. Then cut it into 3/4-inch thick medallions. Season generously with salt, pepper, and garlic powder.
- Mix the Sauce: In a mixing bowl, whisk together the honey, Dijon mustard, chicken broth, and cornstarch until smooth.
- Sear the Pork: Heat olive oil and butter in a skillet over medium-high heat. Add the pork medallions and sear for about 3 minutes on each side until golden brown.
- Add the Sauce: Lower the heat, pour in the honey mustard sauce, and cook for an additional 1-3 minutes until the pork reaches 145°F and the sauce thickens.
- Garnish and Serve: Sprinkle chopped parsley over the top, adjust seasoning to taste, and serve warm.
