Description
A refreshing salad that comes together in about 30 minutes and requires no cooking, perfect for weeknight dinners.
Ingredients
Scale
- 6 cups mixed salad greens
- 1 large Granny Smith apple, diced
- 1/2 cup dried cranberries
- 1/2 cup toasted walnuts or pecans, chopped
- 1/2 cup crumbled blue cheese or Gorgonzola
- 1/4 cup orange juice
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
Instructions
- Prepare the Dressing: In a mixing bowl, whisk together the orange juice, lemon juice, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Slowly drizzle in the olive oil while whisking until emulsified. Set it aside and let those flavors mingle.
- Toast the Nuts: In a small skillet over medium heat, add your chopped walnuts or pecans. Toast them, stirring occasionally, until fragrant and golden (about 5-7 minutes). Let them cool before adding to the salad.
- Combine the Salad Ingredients: In a large salad bowl, combine mixed greens, diced apple, dried cranberries, toasted nuts, and blue cheese.
- Dress the Salad: Drizzle dressing over the salad and toss gently to combine.
- Serve Immediately: Scoop up the mixture into serving bowls and enjoy fresh!
