Description
A comforting and quick Irish soup loaded with wholesome veggies, ready in about 30 minutes.
Ingredients

- 4 cups vegetable broth
- 1 cup potatoes, diced
- 1 cup carrots, diced
- 1 cup onions, chopped
- 2 cups cabbage, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon thyme
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Toss in onions and carrots, cooking for 5-7 minutes until softened.
- Add diced potatoes and chopped cabbage, stirring to mix.
- Pour in the vegetable broth and stir.
- Sprinkle in salt, pepper, thyme, and parsley, mixing well.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Serve in warm bowls and garnish with extra parsley.
