Description

A comforting and quick Irish soup loaded with wholesome veggies, ready in about 30 minutes.


Ingredients

Scale
  • 4 cups vegetable broth
  • 1 cup potatoes, diced
  • 1 cup carrots, diced
  • 1 cup onions, chopped
  • 2 cups cabbage, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon thyme
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Toss in onions and carrots, cooking for 5-7 minutes until softened.
  3. Add diced potatoes and chopped cabbage, stirring to mix.
  4. Pour in the vegetable broth and stir.
  5. Sprinkle in salt, pepper, thyme, and parsley, mixing well.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  7. Serve in warm bowls and garnish with extra parsley.
