Description

Ingredients

  • 2 cups leftover rice
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can black beans, rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup chicken or vegetable broth
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add diced onion and bell pepper, sauté for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add leftover rice, canned tomatoes, black beans, and corn. Stir to combine.
  5. Pour in broth, add salt and pepper, paprika, and cumin. Stir well.
  6. Cook the mixture over medium heat until heated through, about 5-10 minutes.
  7. Sprinkle shredded cheese on top and let it melt.
  8. Serve warm directly from the skillet.
