- 1/2 cup Protein Powder
- 1/2 cup Unsweetened Shredded Coconut
- 1/4 cup Almond Butter
- 1/4 cup Honey or Maple Syrup
- 1 Zest Lemon
- 2 tablespoons Lemon Juice
- 1/4 teaspoon Salt
- 2 tablespoons Chia Seeds or Flaxseeds (Optional)
Instructions
- Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, protein powder, shredded coconut, and salt. If using chia or flaxseeds, add them now and stir!
- Mix Wet Ingredients: In a separate bowl, mix together almond butter, honey, lemon zest, and lemon juice until smooth.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir until well combined. The mixture should feel sticky.
- Form the Balls: Grab portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
- Chill: Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
