Description

A delightful recipe for no-bake Lemon Coconut Protein Power Balls that are quick, easy, and perfect for snacking.


Ingredients

  • 1 cup Rolled Oats
  • 1/2 cup Protein Powder
  • 1/2 cup Unsweetened Shredded Coconut
  • 1/4 cup Almond Butter
  • 1/4 cup Honey or Maple Syrup
  • 1 Zest Lemon
  • 2 tablespoons Lemon Juice
  • 1/4 teaspoon Salt
  • 2 tablespoons Chia Seeds or Flaxseeds (Optional)

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, protein powder, shredded coconut, and salt. If using chia or flaxseeds, add them now and stir!
  2. Mix Wet Ingredients: In a separate bowl, mix together almond butter, honey, lemon zest, and lemon juice until smooth.
  3. Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir until well combined. The mixture should feel sticky.
  4. Form the Balls: Grab portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
  5. Chill: Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
