Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Mix in the lemon juice, lemon zest, egg, and vanilla extract until well blended.
  5. Gradually add the dry ingredients to the wet mixture, folding until just incorporated.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Roll small portions of dough into balls and coat each ball in powdered sugar.
  8. Place them on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, or until the edges are lightly golden.
  10. Allow them to cool before transferring to a wire rack.
