Instructions
- Preheat your oven to 350°F (175°C).

- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Mix in the lemon juice, lemon zest, egg, and vanilla extract until well blended.

- Chill the dough in the refrigerator for 30 minutes.
- Roll small portions of dough into balls and coat each ball in powdered sugar.
- Place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow them to cool before transferring to a wire rack.
