Description
A hearty Loaded Potato Beef Soup that comes together in about 30 minutes, made in one pot for a cozy family dinner.
Ingredients

- 4 medium russet potatoes, diced
- 1 lb ground beef
- 1 cup cheddar cheese, shredded
- 1 cup bacon, cooked and crumbled
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.
- Add the ground beef, breaking it up as it cooks. Brown until no longer pink, about 5-7 minutes, draining excess fat.
- Toss in the diced potatoes and pour in the beef broth. Bring to a simmer, then reduce heat and cook until potatoes are tender, about 15-20 minutes.
- Remove from heat and stir in cheddar cheese and crumbled bacon until melted and creamy.
- Season to taste with salt and pepper.
- Serve hot, garnished with extra cheese or bacon if desired.
Notes
Can be stored in the refrigerator for 3-4 days. Great for meal prep and can be frozen for up to 3 months.
