Description

A hearty Loaded Potato Beef Soup that comes together in about 30 minutes, made in one pot for a cozy family dinner.


Ingredients

Scale
  • 4 medium russet potatoes, diced
  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 cup bacon, cooked and crumbled
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.
  2. Add the ground beef, breaking it up as it cooks. Brown until no longer pink, about 5-7 minutes, draining excess fat.
  3. Toss in the diced potatoes and pour in the beef broth. Bring to a simmer, then reduce heat and cook until potatoes are tender, about 15-20 minutes.
  4. Remove from heat and stir in cheddar cheese and crumbled bacon until melted and creamy.
  5. Season to taste with salt and pepper.
  6. Serve hot, garnished with extra cheese or bacon if desired.

Notes

Can be stored in the refrigerator for 3-4 days. Great for meal prep and can be frozen for up to 3 months.
