Description

Comforting and versatile Louisiana Dirty Rice, ready in about 30 minutes, perfect for quick weeknight dinners and clean-out-the-fridge meals.


Ingredients

  • 1 lb lean ground beef
  • 1 lb ground pork sausage
  • 4 cups cooked rice
  • 1 cup chicken broth
  • 1 cup green bell pepper
  • 1 cup yellow onion
  • 1 cup celery
  • 2 tbsp flour
  • 3 tbsp bacon grease
  • 2 bay leaves
  • 1 tbsp fresh parsley
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tbsp minced garlic
  • 1 tbsp chili powder
  • 1 tsp ground black pepper
  • 1 tbsp paprika
  • 1/2 tsp cayenne pepper

Instructions

  1. In a large pot, over medium heat, add the bacon grease (or olive oil) and let it melt down. Add the onion, bell pepper, celery, and minced garlic. Cook until fragrant, about 3-4 minutes.
  2. Add the ground beef and pork sausage, breaking up the meat as it cooks until browned, about 5-7 minutes.
  3. Sprinkle in chili powder, paprika, oregano, thyme, pepper, and cayenne, stirring to coat everything. Cook for another 2 minutes.
  4. Stir in the flour and cook for another 1-2 minutes.
  5. Carefully add the cooked rice and chicken broth. Toss in the bay leaves and stir everything together. Bring to a simmer and reduce heat to low, cooking for about 5-10 minutes.
  6. Remove the bay leaves and finish with fresh parsley before serving.

Notes

Serve hot with a side salad or crusty bread. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
