Description

These quick and easy Low FODMAP Beef Enchiladas come together in 30 minutes! A comfort food that your family will love, filled with flavor and versatility.


Ingredients

  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 corn tortillas (gluten-free if necessary)
  • 1 cup low FODMAP red enchilada sauce
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  3. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  4. Warm corn tortillas in a separate pan or microwave for 30 seconds until pliable.
  5. Assemble the enchiladas by placing a scoop of seasoned beef in each tortilla and rolling them up tightly. Place seam-side down in a greased baking dish.
  6. Pour red enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top if desired.
  7. Bake for 20-25 minutes until heated through and cheese is melted.
  8. Garnish with fresh cilantro before serving.
