Description

A refreshing no-cook dessert featuring tapioca pearls and ripe mangos, perfect for warm days.


Ingredients

  • 1/2 cup small tapioca pearls
  • 1 cup coconut milk
  • 1 cup milk
  • 23 ripe mangos, chopped
  • 1/41/3 cup sweetened condensed milk
  • 1 jar nata de coco (coconut jelly)

Instructions

  1. Bring water to a boil (about 5-7 minutes).
  2. Cook the tapioca pearls (25-30 minutes) until they are fully translucent.
  3. Rinse and drain the pearls (2 minutes) under cold water.
  4. Make the creamy mango mixture (7-10 minutes) by mixing cooked tapioca, coconut milk, and chopped mangos; add sweetened condensed milk.
  5. Add the nata de coco (2-3 minutes) and mix gently to combine.

Notes

Serve chilled and can be customized with fruits on hand. Garnish with toasted coconut flakes or fresh mint.
