Ingredients

  • 2 ripe mangos
  • 1 cup tapioca sago pearls
  • 1 can (400ml) coconut milk
  • 1/2 cup sugar (adjust to taste)
  • Water (for cooking sago)
  • Ice (optional, for serving)

Instructions

  1. Cook the Sago Pearls: Start by boiling a pot of water (about 4 cups) on the stove. Once boiling, add your tapioca sago pearls and cook according to the package instructions—usually about 10-15 minutes—until they become transparent. Drain and rinse under cold water.
  2. Mix the Coconut Base: In a separate pot, combine your coconut milk and sugar over medium heat. Stir until the sugar is dissolved, about 3-5 minutes.
  3. Combine the Pearls and Coconut Milk: Once your sago pearls are cooked and cooled, toss them into the warm coconut milk mixture and stir until blended.
  4. Prepare Your Mangos: Peel and dice the mangos.
  5. Serve Up Your Mango Sago: Fill bowls with the sago and coconut mixture, and top with diced mangos.
  6. Optional – Add Ice: Toss in some ice for a refreshing blend. Enjoy chilled!
