Description

A vibrant and refreshing Mango Slaw that comes together in about 20 minutes with no cooking required. Perfect as a side dish for family meals.


Ingredients

  • 2 ripe mangos, diced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded cabbage (green or purple)
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Grab a large bowl and combine the diced mangos, thinly sliced red bell pepper, shredded cabbage, red onion, and chopped cilantro.
  2. In a separate small bowl, whisk together the juice of one lime, your choice of sweetener (honey or agave syrup), and a couple pinches of salt and pepper.
  3. Pour that dressing over the colorful slaw and toss everything to combine.
  4. Let it sit in the fridge for about 30 minutes if possible.
  5. Serve immediately as a side dish.

Notes

For best flavor, allow the slaw to rest before serving. Great as a topping for sandwiches or wraps.
