A vibrant and refreshing Mango Slaw that comes together in about 20 minutes with no cooking required. Perfect as a side dish for family meals.
Ingredients

- 2 ripe mangos, diced
- 1 red bell pepper, thinly sliced
- 1 cup shredded cabbage (green or purple)
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon honey or agave syrup
- Salt and pepper to taste
Instructions
- Grab a large bowl and combine the diced mangos, thinly sliced red bell pepper, shredded cabbage, red onion, and chopped cilantro.
- In a separate small bowl, whisk together the juice of one lime, your choice of sweetener (honey or agave syrup), and a couple pinches of salt and pepper.
- Pour that dressing over the colorful slaw and toss everything to combine.
- Let it sit in the fridge for about 30 minutes if possible.
- Serve immediately as a side dish.
Notes
For best flavor, allow the slaw to rest before serving. Great as a topping for sandwiches or wraps.
