Ingredients

- 4 flaky croissants
- 2 tablespoons real maple syrup
- 1 tablespoon mustard (Dijon or yellow)
- 4 eggs
- Cheese (cheddar, Swiss, gouda, or pepper jack)
- Bacon or sausage (optional)
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat.
- In a medium bowl, crack the eggs and whisk with salt and pepper until frothy.
- Pour the egg mixture into the skillet and cook for 4-5 minutes, stirring until scrambled to desired consistency.
- If using, add bacon or sausage to the skillet and cook until crispy (5-6 minutes).
- In a small bowl, whisk together the maple syrup and mustard.
- Slice and lightly toast the croissants.
- Spread the maple mustard mixture on the bottom half of each croissant, then layer on scrambled eggs, cheese, and bacon or sausage (if using).
- Top with the other half of the croissant and serve hot.
