Description

A quick and easy Marinated Citrus Chicken recipe that’s great for grilling, perfect for busy weeknights!


Ingredients

Scale
  • 1 red onion, finely chopped
  • 1/2 bell pepper, diced
  • 1/4 bunch parsley, chopped
  • 6 allspice berries
  • 8 tablespoons honey
  • 1 1/2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1/2 tablespoon black pepper
  • 1 teaspoon salt
  • 1 1/2 lemons, juiced
  • 3 oranges, juiced

Instructions

  1. Chop it up: In a mixing bowl, combine the finely chopped red onion, diced bell pepper, chopped parsley, and allspice berries. Stir it all together until it’s nicely mixed!
  2. Squeeze those lemons and oranges: Squeeze the juice from the lemons and oranges into the mixture. Stir it well to combine all the flavors.
  3. Marinade time: Pour that lovely marinade all over your chicken in a shallow dish or RESEALABLE bag. Make sure it’s well-coated!
  4. Chill out: Cover it up and pop it in the fridge to marinate for at least 120 minutes, preferably overnight.
  5. Cook it up: When you’re ready to eat, take out the chicken, toss it on a hot grill or bake it at 375°F for 25-30 minutes until fully done.

Notes

Try adding whatever veggies you have on hand to the marinade for added flavor and nutrition.
