Description

A comforting Mediterranean baked dish featuring eggs and feta cheese, perfect for a quick breakfast or light dinner.


Ingredients

  • 1 block feta cheese
  • 4 large eggs
  • 1 cup cherry or grape tomatoes, chopped
  • 1 cup bell peppers, chopped (mix of red and yellow)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grab a baking dish (an 8×8 is just perfect!) and place the feta cheese in the center. Surround it with chopped tomatoes and bell peppers.
  3. Drizzle with olive oil, and season with salt and pepper.
  4. Crack the eggs over the feta and veggies, aiming for a sunny-side-up look.
  5. Pop the baking dish into the oven and bake for about 20-25 minutes, or until the eggs are set and feta is golden.
  6. Once it’s out of the oven, sprinkle with fresh herbs and serve warm.

Notes

Serve with crusty bread for dipping or alongside roasted potatoes. Store leftovers in the fridge for up to 3 days.
