A delightful Mediterranean beef meatball bowl that comes together in under 30 minutes for a quick weeknight meal.

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tablespoons lemon juice
- 2 tablespoons olive oil (for dressing)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix together ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, and salt and pepper in a bowl.
- Form the mixture into meatballs—about the size of golf balls—and place them on a baking sheet.
- Toss diced potatoes with olive oil, paprika, and a sprinkle of salt and pepper, then spread them on another baking sheet.
- Bake the meatballs and potatoes in the oven for 20-25 minutes, until cooked through and golden-brown.
- Combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
- Whisk together lemon juice and olive oil in a small bowl to create a dressing, then drizzle over your salad.
- Layer the roasted potatoes on a plate, top with meatballs, and add the fresh salad.
Notes
Serve with warm pita bread or couscous; can be stored in the fridge for 3-4 days.
