Description

A delightful Mediterranean beef meatball bowl that comes together in under 30 minutes for a quick weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 4 medium potatoes, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil (for dressing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, and salt and pepper in a bowl.
  3. Form the mixture into meatballs—about the size of golf balls—and place them on a baking sheet.
  4. Toss diced potatoes with olive oil, paprika, and a sprinkle of salt and pepper, then spread them on another baking sheet.
  5. Bake the meatballs and potatoes in the oven for 20-25 minutes, until cooked through and golden-brown.
  6. Combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
  7. Whisk together lemon juice and olive oil in a small bowl to create a dressing, then drizzle over your salad.
  8. Layer the roasted potatoes on a plate, top with meatballs, and add the fresh salad.

Notes

Serve with warm pita bread or couscous; can be stored in the fridge for 3-4 days.
