Description

A flavorful Mediterranean breakfast sandwich made quickly using a skillet method, perfect for busy mornings.


Ingredients

Scale
  • 2 slices Whole Grain Bread
  • 3 large Eggs
  • 1 tablespoon Olive Oil
  • 1/2 cup Crumbled Feta Cheese
  • 1 cup Fresh Spinach
  • 1/4 cup Sun-Dried Tomatoes
  • 1/4 cup Black Olives
  • to taste Salt
  • to taste Pepper
  • a few Fresh Basil Leaves

Instructions

  1. Heat the skillet over medium heat and add olive oil, letting it warm up until shimmering (2 minutes).
  2. Crack the eggs into a bowl and whisk them until blended. Add salt and pepper (1 minute).
  3. Pour the eggs into the skillet and cook, stirring occasionally, until they are almost fully set (3-4 minutes).
  4. Add spinach and sun-dried tomatoes to the skillet and stir until the spinach wilts (2-3 minutes).
  5. Return the cooked eggs to the skillet, adding black olives and feta cheese, and mix until combined (1 minute).
  6. Toast the whole grain bread until crispy (2 minutes).
  7. Assemble the sandwich by layering the egg mixture on the toasted bread and top with basil leaves (2 minutes).

Notes

This sandwich can be easily customized with available ingredients and is great for using up leftovers.
