- 2 tablespoons fresh thyme (or 2 teaspoons dried)
- 1 tablespoon fresh rosemary, finely chopped
- 2 bay leaves
- 1 teaspoon sea salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 2 tablespoons fresh lemon juice
- ½ teaspoon smoked paprika (optional)
- Crumbled feta cheese, for serving
- Fresh herb sprigs, for garnishing
- Toasted pine nuts, for added crunch
- Crusty bread, drizzled with olive oil for dipping
Instructions
- Prepare the aromatic base: Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5-6 minutes. Add minced garlic and cook for 1 more minute.
- Add the cauliflower florets and herbs: Coat the cauliflower in the oil, stirring in oregano, thyme, rosemary, and bay leaves. Cook for 3-4 minutes.
- Build the soup base: Pour in vegetable broth and water, ensuring it covers the cauliflower. Add salt, pepper, and smoked paprika. Bring to a boil then simmer.
- Simmer to perfection: Cover and let it simmer for 20-25 minutes, until cauliflower is tender.
- Blend and finish: Remove bay leaves, blend the soup until smooth, stir in lemon juice, and adjust seasonings as necessary.
- Serve with Mediterranean flair: Ladle soup into bowls, drizzle with olive oil, and top with feta, herbs, or pine nuts. Serve with crusty bread for dipping.
