Ingredients

  • 3 garlic cloves, minced
  • 4 cups vegetable broth (or chicken broth)

  • 2 tablespoons fresh oregano (or 2 teaspoons dried)
  • 2 tablespoons fresh thyme (or 2 teaspoons dried)
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 bay leaves
  • 1 teaspoon sea salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon smoked paprika (optional)
  • Crumbled feta cheese, for serving
  • Fresh herb sprigs, for garnishing
  • Toasted pine nuts, for added crunch
  • Crusty bread, drizzled with olive oil for dipping

Instructions

  1. Prepare the aromatic base: Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5-6 minutes. Add minced garlic and cook for 1 more minute.
  2. Add the cauliflower florets and herbs: Coat the cauliflower in the oil, stirring in oregano, thyme, rosemary, and bay leaves. Cook for 3-4 minutes.
  3. Build the soup base: Pour in vegetable broth and water, ensuring it covers the cauliflower. Add salt, pepper, and smoked paprika. Bring to a boil then simmer.
  4. Simmer to perfection: Cover and let it simmer for 20-25 minutes, until cauliflower is tender.
  5. Blend and finish: Remove bay leaves, blend the soup until smooth, stir in lemon juice, and adjust seasonings as necessary.
  6. Serve with Mediterranean flair: Ladle soup into bowls, drizzle with olive oil, and top with feta, herbs, or pine nuts. Serve with crusty bread for dipping.
